Spice
Muffins
2 cups sifted flour
1/3 cup sugar
1
tblsp. baking powder
2 tsps. cinnamon
1 tsp. ginger
1/4
nutmeg
1/2 tsp. salt
1 cup milk
1/3 cup veg. oil
1
egg
2 tsps. vanilla
Into large bowl, sift together flour,
sugar, baking powder, salt and spices. Set aside.
In a
small bowl mix milk, oil, egg, and vanilla. Add milk mixture to
dry ingredients; stir just until moistened. Spoon batter into
12 paper lined (or greased and floured) muffin-pan cups,*
filling two thirds full.
Bake in 400 degree oven for 25
minutes or until muffins are golden brown and toothpick inserted in
center comes out clean. Serve warm or cold. Makes 12
muffins.*
*We got NINE small muffins out of this, NOT 12.
Contrariwise, the spice cupcake recipe did make the 18 cupcakes it
said it would.
Comments: Although the spray we use to
oat the pans works REALLY well, it does make a mess all over the
kitchen. Be careful where you spray.
