Cinnamon Wonderfulness

Crust:

One batch

3 cups flour
1 tsp. salt
1 cup Crisco
1 egg
1 tsp. vinegar
7 1/2 tbls. Water

1 1/2 batches

4 ½ cups flour
1 ½ tsps salt
1 ½ cups Crisco
1 ½ eggs
1 ½ tsps vinegar
11 ¼ tbls water

double batch

6 cups flour
2 tsps salt
2 cups Crisco
2 eggs
2 tsps vinegar
15 tbls water


Measure flour and salt into a bowl and add the Crisco. Using a pastry blender, cut the Crisco into the flour until the mixture looks mealy. In a small bowl combine water, beaten eggs and vinegar. Add the wet ingredients to the dry ingredients and blend with a spoon or your hands until the dough forms a ball.

Separate out a softball sized chunk of dough and place on a lightly floured surface. Using a loured rolling pin, roll dough into a rectangle. Spread butter over dough,cover with an even coating of brown sugar. Then cover that with cinnamon. I like lots of cinnamon.

Starting on the long side of the rectangle, roll the dough into a log. Pinch the ends to seal. You should also pinch the seam across the log to seal that. Place on cookie sheet and bake in a 350 degree (Fahrenheit) oven for roughly 20 minutes or until golden brown. Cool briefly, slice into one inch pieces and enjoy.
